This is a great Scandinavian pickled cucumber accompaniment for a Christmas ham or a side of salmon that only takes minutes to make and will really impress your guests. An essential part of any smorgasbord.

- 2 tbsp golden caster sugar
- 2 tsp yellow mustard seeds
- 1 large cucumberpeeled and cut into batons
- a small bunch parsleychopped

Method
step 1
Heat the vinegar and sugar until the sugar dissolves. Cool, then mix in the mustard seeds and cucumber. Chill for at least an hour, or until you need to eat it. Stir in the parsley before serving.
