
Fragrant spiced rice
Basamati rice is a great versatile vegetarian side that will go with so many dishes such as curries, chillies and stews. This version is subtly spiced with cinnamon and coriander and finished with fresh spring onion and coriander.
- 500g basmati rice
- 1 litre vegetable or chicken stock
- 1 cinnamon stick
- 1 tsp coriander seeds
- 4 spring onionscut into thin slices
- small bunch corianderchopped

Method
step 1
Put all the ingredients except the spring onions and coriander in a medium pan. simmer until the rice is al dente, about 8-10 minutes, and then drain off any excess liquid.
step 2
Put back in the pot and add the onions. keep a lid on until serving. when ready to eat, stir the fresh coriander through.
