
Overnight bircher muesli with cherries, peach and coconut
This recipe for overnight bircher muesli with cherries, peach and coconut is a great healthy, make-ahead breakfast if you're short of time in the mornings
- 125g rolled oats
- 25g dessicated coconutplus a sprinkle extra to serve
- 75ml coconut water
- 75ml (or a similar juice with some peach in it) apple or peach or pear juice
- 150g dairy-free coconut yogurt
- 1 tbsp agave syrupif you like
- 1 tbsp chia seeds
- 2 tbsp pumpkin seeds
- 150g cherrieshalved and pitted
- 1 ripe peach or nectarinestoned and chunkily diced

Method
step 1
Mix together the oats, coconut, coconut water, juice, yogurt, agave and chia seeds. Leave overnight, or for at least 1 hour.
step 2
To eat, stir through most of the pumpkin seeds and half the cherries (plus a splash more juice if you like it creamier). Divide between three bowls, then scatter the remaining cherries, peach and pumpkin seeds on top with a pinch more coconut and drizzle of agave, if you like.
