  • 25g dessicated coconut
    plus a sprinkle extra to serve
  • 75ml coconut water
  • 75ml (or a similar juice with some peach in it) apple or peach or pear juice
  • 150g dairy-free coconut yogurt
  • 1 tbsp agave syrup
    if you like
  • 1 tbsp chia seeds
  • 2 tbsp pumpkin seeds
  • 150g cherries
    halved and pitted
  • 1 ripe peach or nectarine
    stoned and chunkily diced

Method

  • step 1

    Mix together the oats, coconut, coconut water, juice, yogurt, agave and chia seeds. Leave overnight, or for at least 1 hour.

  • step 2

    To eat, stir through most of the pumpkin seeds and half the cherries (plus a splash more juice if you like it creamier). Divide between three bowls, then scatter the remaining cherries, peach and pumpkin seeds on top with a pinch more coconut and drizzle of agave, if you like.
