This light Thai-inspired soup is ready in just 10 minutes – ideal for a quick tasty lunch. Tom yum paste is easy to find and gives the soup its authentic taste.

- 1 litre chicken or vegetable stock
- 1-2 tbsp (look in the Asian ingredients section at the supermarket) tom yum paste
- 200g mushroomsshiitake and shimeji
- 4 dried shiitake mushroomssoaked until rehydrated (snip the ends off)
- 1 limejuiced
- 1 tbsp fish sauce
- 1 red chillisliced
- a handful coriander

Method
step 1
Bring the stock to the boil and stir in the paste. Add the mushrooms and simmer for 5 minutes. Add the remaining ingredients, season with more fish sauce if you think it needs it.
