
Gorgonzola gnocchi with parsley salad
The best comfort food is the recipe that can be made in a flash. This vegetarian gnocchi recipe is topped with creamy gorgonzola and a quick parsley, caper and red onion salad which lifts it, to create a special dinner for two to share.
- 1 pack gnocchiabout 400g
- 100g gorgonzola
- 100g half-fat crème fraîche
- 2 tsp red wine vinegar
- olive oil
- 2 tsp capersrinsed
- ½ bunch parsleyleaves only
- ½ small red onionthinly sliced

Method
step 1
Cook the gnocchi then drain and toss with the crème fraîche and gorgonzola. Tip into a heat-proof dish and grill until golden. Whisk the vinegar with 1 tbsp olive oil and season, then toss with the capers, parsley and onion. Scatter the caper mix over the gnocchi before serving.
