
Chicken laksa
A quick laksa recipe. Cook chicken and laksa paste in a pan with beansprouts, kaffir lime leaves and coconut milk for an easy and healthy Thai one pot for the family or as a casual dinner party dish for friends.
- 4 chicken thigh filletscut into cubes
- 2-3 tbsp laksa paste
- 400ml chicken stock
- 400ml coconut milk
- 2 lime leavesfinely shredded
- 200g beansprouts
- 200g cooked rice or egg noodles
- 1 red chillifinely sliced
- to season fish sauce

Method
step 1
Put the chicken and paste in a pan and heat them gently, turning the chicken in the paste. Stir in the chicken stock and bring everything to a simmer.

Add the coconut milk and lime leaves and simmer for 5 minutes, then add the beansprouts for 1 minute more.
step 3
Divide the noodles between 4 bowls and divide the laksa between them. Sprinkle with chilli to serve and season with fish sauce.
