
Ox burger
An easy but so good burger. Beef mince, capers and gherkins for the patty. A quick homemade tomato sauce is the best finishing touch. Best for a weekend treat or special midweek meal.
- 500g minced beef
- 1 onionfinely diced
- 1 tbsp capersrinsed and roughly chopped
- finely chopped to make 1 tbsp gherkins
- 1 egg
- 3 tbsp breadcrumbs
- y small bunch flat-leaf parsleyleaves chopped
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
tomato sauce
- 2 × 400g tins plum tomatoes
- 2 shallotsfinely diced
- 2 cloves garliccrushed
- 1 tbsp leaves fresh thyme
- 2 tsp vegetable oil

Method
step 1
To make the tomato sauce, combine all the ingredients in a pan and season. Cover and simmer over a low heat for 1 hour, or until the sauce is thickened. Allow to cool.
step 2
Mix all the burger ingredients and season well. Shape into 4 patties. Grill for 8–10 minutes, turning once. Serve in a bun or quarter ciabatta with the tomato sauce.
