- 100g white crab meat
- 1 small red chillidiced
- chopped to make 1 tbsp coriander
- chopped to make 1 tbsp dill
- chopped to make 1 tbsp chives
- 1 tbsp low-fat crème fraîche
- 2 eggs
- olive oil
- to serve herb and leaf salad
- to serve chilli sauce(although not if you're gluten-free)

Method
step 1
Mix the crab, chilli, herbs and crème fraîche and season well.

Beat the eggs with some seasoning until pale. Heat 1 tsp oil in a small frying pan, and pour in the eggs, making a thin omelette. When the omelette is just set, tip the crab mixture in, fold in half and warm through for a minute. Serve with a herby salad and chilli sauce if you like.
