- 1 small cooked skinless chicken breastshredded
- 1 carrotpeeled and shredded
- a small handful green beanstrimmed and sliced
- ¼ small white or red cabbagefinely shredded
- 1 shallotfinely sliced
- a handful watercress
- 2 tbsp cashew nutstoasted
- 1 tsp sesame seedstoasted
- 1 tsp sesame seeds
- 1 tsp lime juice
- 1 tsp soy sauce
- chopped to make 1 tbsp chives
- 1 tsp rice wine vinegar

Method
step 1
Mix the dressing ingredients together with some seasoning, and loosen with 1 tsp water. Toss the chicken, carrot, green beans, cabbage, shallot and the dressing in a bowl. Just before serving add the watercress, roughly chop the cashews and add to the bowl. Sprinkle with sesame seeds to serve.
