
Soy and sesame salmon with warm noodle salad
A quick marinade can perk up a simple piece of salmon no end. This one, with soy and sesame needs leaving for just 10 minutes before the salmon is ready to be cooked. Serve with an easy noodle side, using egg noodles dressed in the remaining marinade and served with mange tout, red pepper and spring onions are perfect.
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 limejuiced
- 1 tbsp soft brown sugar
- 2 skinless salmon fillets
- 100g egg noodles
- 50g mange toutshredded lengthways
- 1 red pepperthinly sliced
- 4 spring onionssliced

Method
step 1
Mix the soy sauce, sesame oil and lime juice with the sugar until dissolved. Put the salmon in a freezer bag with half the marinade and leave for 10 minutes. Meanwhile, cook the noodles following the packet instructions, drain and toss with the remaining marinade, mange tout, pepper and spring onion.

Grill the salmon under a hot grill for 5 minutes until glazed and just cooked through. Serve with the noodles.
