
Soba noodles with broccoli, prawns and sweet soy dressing
A great quick prawn noodle dish with a sweet soy dressing that tastes really fresh. Ketjap (kecap) manis is a thick, sweet soy sauce from Indonesia. It is far less salty than using soy and makes great dressings or dipping sauces. Major supermarkets stock it in the Asian section.
- 200g soba (buckwheat) noodles
- 200g broccolicut into small florets
- 100g large cooked prawns
- 1 red peppercut into matchsticks
- 1 limecut into wedges
SWEET SOY DRESSING
- 6 tbsp ketjap (kecap) manis
- 1 medium red chilliseeded and chopped
- 1 clove garlicfinely chopped
- 1 tbsp gingerfinely chopped
- 2 limesjuiced
Method
step 1
Boil the soba noodles for 5 minutes or until al dente. Drain and rinse in very cold water. Drain again and put in a large bowl. Blanch the broccoli in salted water until al dente. Drain, rinse in very cold water, drain thoroughly again and add to the noodles.

Combine the dressing ingredients in a small bowl. Pour over the noodles, add the prawns and peppers and mix well. Serve with lime wedges.
