
Prawn salad with lime and honey dressing
This delicious prawn and mango salad is full of flavour, with a lime and honey dressing combining the sourness of lime with the sweetness of honey. The toasted coconut makes a terrific crunchy topping and the salad can be served as part of an Asian meal or summer buffet.
- 20g dessicated coconut
- 150g spinach leaves
- 150g large cooked prawns
- 1 small red oniondiced
- 1 large mangopeeled and cubed
- to garnish coriander
- 1/2 red chillito garnish
- 3 tbsp lime juice
- 1 tbsp honey
- 1 tsp mustard
- 5 tbsp sunflower oil
Method
step 1
Dry fry the coconut over a medium heat until lightly toasted. Whisk the dressing ingredients together and season.

Arrange the spinach, prawns, red onion and mango in a large salad bowl. Sprinkle with the coconut, chilli and coriander and pour the dressing over just before serving.
