
Yorkshire puddings
One of our best recipes for Yorkies. For extra flavour and a light, fluffy texture, try using dripping and make sure the fat is hot before adding your batter
- 150g plain floursifted
- 6 eggs
- 275ml milk
- oil or dripping

Method
step 1
Heat the oven to 220C/fan 200C/gas 7. Sift the flour into a bowl and make a well in the centre. Stir or whisk in the eggs and milk until you have a smooth batter. Season with a good pinch of salt.

Put your tins in the oven for 3 minutes to heat up. Remove, add a little oil or dripping to each (about ½ tsp), and put back in the oven until the oil is smoking hot. Quickly half fill each with batter. Put straight back in and cook for 10 minutes, then turn the oven down to 180C/fan 160C/gas 4 and cook for a further 10 minutes.
