  • 400g flour
  • 200g butter
    chilled and diced
  • 50g golden caster sugar
  • 2 egg yolks
  • 1 orange
    grated rind

Method

  • step 1

    Whizz 400g flour and 200g chilled and diced butter to breadcrumbs in a food processor.
    Add 50g golden caster sugar and mix. Add 2 egg yolks and grated rind 1 orange and pulse until it comes together into a dough (you might need to add a splash of water).
    Wrap in clingfilm and chill for 20 minutes.

    Heat oven to 190c/fan 170c/gas 5. Roll out the pastry and stamp out circles big enough to fit 2 × 12-hole jam tart tins.
    Bake for 15 minutes, then add small spoonfuls of jam to each and bake for 5 mins.
