Quick and easy salad dressings

Hot Thai dressing

garlic ½ a clove, crushed

bird's-eye chilli 1, finely chopped

ginger a thumb-sized piece, finely grated

limes 2, juiced

soft light brown sugar 2 tbsp

fish sauce 3 tbsp

Whisk together all the ingredients and season. Ideal for crunchy vegetable and noodle salads.

Ranch dressing

mayonnaise 6 tbsp

soured cream 6 tbsp

white wine vinegar 3 tbsp

garlic granules 1 tsp

dill a handful, finely chopped

Whisk together all the ingredients and season. Ideal for an iceberg lettuce wedge salad or chicken.

Honey mustard dressing

runny honey 1 tbsp

dijon mustard 3 tbsp

cider vinegar 4 tbsp

olive oil 6 tbsp

Whisk together all the ingredients and season. Ideal with soft watercress or crisp chicory.

Italian tomato dressing

SunBlush tomatoes 8, drained

capers 1 tbsp

garlic ½ a clove

red wine vinegar 6 tbsp

olive oil 8 tbsp
