This gin-based treat from Singapore is made with an array of exciting ingredients, including cherry brandy and Cointreau

- 25ml gin
- 1 tbsp cherry brandy
- ½ tbsp benedictine
- ½ tbsp Cointreau
- 50ml pineapple juice
- 1 tbsp lime juice
- a dash Angostura bitters
- sparkling waterto top up (optional)
- pineapple wedge and maraschino cherryto garnish
Method
step 1
Put the gin, brandy, Bénédictine, Cointreau, pineapple juice, lime juice and Angostura bitters in a cocktail shaker with ice and shake well to combine, then strain into a highball glass filled with ice.

Top up with a little sparkling water, if you like, and garnish with a pineapple wedge and maraschino cherry.
