- 150g shiitake mushroomsstems removed and cut into 3 pieces
- 100g oyster mushroomstorn into thick pieces
- 250g (we used Ocado Gold) exotic mushroom trio mix
- 4 cloves garlicthinly sliced
- ½ red chillisliced
- 125g unsalted buttercubed
- 3 tbsp soy sauce
- 1 tbsp mirin
- 60ml sake
- to serve lemon wedges

Method
step 1
Heat the oven to 200C/fan 180C/gas 6. Lay out 2 large sheets of foil, one on top of the other. Pile the mushrooms into the centre, scatter with the garlic, chilli and butter, then pour over the soy, mirin and sake. Fold up the sides of the foil and seal the package tightly.

Bake for 30 minutes then serve straight away with lemon wedges.
