  • 400 g Flour
  • 200 ml Water
  • 1 cube Yeast
    fresh, (à ca. 42 g)
  • 1 tsp Salt
  • 1 tsp Sugar
  • 2 tbsp Olive oil
  • 2 tsp Flour
  • 4 tbsp Olive oil
  • 1 tsp Fleur de sel
  • 0.5 tsp Herb mixture

Method

  • step 1

    Put the flour in a bowl. Make a small indentation in the middle of the flour. Measure the lukewarm water in a measuring cup. Crumble the yeast into the water, add the salt, sugar and olive oil and mix well with a whisk until the ingredients have dissolved.

    Pour the liquid into the flour well, working it under the flour with a wooden spoon. Knead the dough by hand or in a food processor for at least 5 minutes , then shape into a smooth ball of dough. Place the ball in a floured bowl, cover with a tea towel and let rise in a warm place for 10 minutes .

  • step 3

    Place the baking paper on a baking sheet, put the dough in the middle and spread it evenly with your fingertips. Cover with a tea towel and leave to rise in the oven at 60 degrees circulating air (80 degrees top and bottom heat) for 20 minutes . The dough should have doubled in size.

  • step 4

    Set the oven to 190 degrees circulating air (210 top and bottom heat) . Brush the dough generously with olive oil and sprinkle with fleur de sel and the dried herbs. Bake in the preheated oven for about 25 minutes . Bon appetit!
