What is Madeira?

Madeira is a fortified wine made on the Portuguese island of the same name in the Atlantic. Originally, the wine was fortified with brandy so that it wouldn't spoil on long journeys. During these journeys it would heat and cool at various times, intensifying and deepening the flavour. This is now part of the process for making modern-day Madeira. It can be drunk alone (it makes a good aperitif) as well as used in cooking.
