What is flaxseed?

Flaxseed refers to the seeds of the flax plant, also known as linseed. The seeds can be ground to make a vegan egg replacement in sponge, cookie and brownie recipes. Mix 1 tbsp milled flaxseed to 3 tbsp of water for a few minutes and use as you would a whole egg. Elsewhere, the seeds can be used in flapjacks, porridge and smoothies, to add fibre and omega-3 fatty acids.
